Application

The NDT Continuous Ricotta Line is a complete enclosed unit in order to coagulate a whey based liquid with the use of Citric or nitric acid. The principle is to pasteurize the whey based mixture, that is standardized to a minimum dry matter of 10%, and temperature stabilize the liquid product and add the coagulation acid in the liquid phase with good mixture in order to deliver a coagulated product at the outlet. It is an integrated part of the NDT Ricotta Line system.

Construction features

 

The NDT Continuous Ricotta Line is based on a traditional pasteurizing unit with addition of a regeneration unit for whey, a coagulant dosing unit and the coagulation spiral.

The product is pasteurized and heated to the coagulation temperature where the coagulant is dosed in accurate amount. A static mixer ensures a good mixture with the coagulant before it enters the coagulation spiral where the product coagulates. The coagulated product enters the NDT Ricotta Draining Conveyor, a  Double Draining Conveyor unit.

The whey that is drained off at the draining conveyor is used as preheating of the Ricotta mixture in order to save energy.

Fully automated, equipped with complete speed control of flow with capacity to handle variations of flow according to the different flow of product through separator and fat standardization units.

Temperature sensors on product and heating water to control the delta T to avoid any destructions of the protein during different capacities of flow and pasteurization temperatures.

Equipped with pressure control, temperature control and divert valves according to the latest European Unit Hygienic legislations  with documentation of temperatures and events.

NDT RDC-Ricotta Draining Conveyor

 Application

The NDT RDC-Ricotta Draining Conveyor is a special designed double draining conveyor for continuous Ricotta production to drain off whey and adjust the coagulum pH before packing and/or mixing.

Construction features

The coagulated Whey (Ricotta) comes from the CRL- Continuous Ricotta Line or a coagulation tank at the entrance of the first of 2 together build conveyors. The whey is drained off on the way to the outlet at the conveyor. At the end the ricotta mass is tumbled over and down on the draining belt of the second conveyor. This conveyor builds up approx. 100mm of curd mass and moves slowly to the outlet in a speed that the required pH is reached. At the outlet the Ricotta mass is tumbled over into and auger that pushes the curd mass into a positive pump. The pump transports the Ricotta either to directly to a packing machine or to a Mixer. When pumped directly to a packing machine the Ricotta passes a static mixer with pressure control to regulate the smoothness of the packed Ricotta. C.I.P. Cleaned.

 Advantages

An efficient continuous system for draining off whey from Ricotta and to adjust to the required pH and consistence of the product. The double woven draining belt has a high draining capacity. The NDT RDC-Ricotta Draining Conveyor increases the yield compared with traditional systems.
